Why use a sterilizer?

1、121℃ high-temperature sterilization process ensures the commercial sterility standard of canned food.

In the high-temperature sterilization process of canned food, the main target of sterilization is Clostridium botulinum, a heat-resistant anaerobic bacterium that can produce toxins causing fatal harm to humans. This bacterium loses its biological activity in about three minutes at 121°C and in about six hours at 100°C. Of course, the higher the temperature, the shorter the survival time of the pathogen. Scientific tests have shown that sterilization at 121°C is more appropriate, as packaging materials have good heat resistance and the food retains a better taste. When sterilized at 121°C, the F value at the center of the food reaches 4, and Clostridium botulinum cannot be detected in the food, meeting the requirements of commercial sterility.

2、Achieving uniform heat distribution is crucial for effective high-temperature sterilization of food.

The sterilization pot serves to create an environment suitable for high-temperature sterilization of canned food, ensuring that food is exposed to the required temperature, time, and pressure. It is crucial that the pot exhibits uniform heat distribution; any deviation in temperature from the average within the container must meet specified standards. A lower temperature at a specific point would prevent achieving the necessary F value for sterilization, thus compromising the sterility of the food in that vicinity. Uniform heat distribution is a key quality indicator for sterilization pots and can be evaluated with a heat distribution measuring device.

3、The sterilization pot rapidly heats up and cools down to optimize taste and nutritional protection.

To preserve the taste and nutrients of food during high-temperature processing, it’s crucial that the sterilization pot achieves rapid and uniform temperature distribution across all points during heating, ensuring consistent F values for a quick completion of the sterilization process. Similarly, rapid cooling is essential to minimize the food’s exposure to high temperatures. This necessitates a well-designed water flow system in the sterilization pot to optimize the process and reduce sterilization time.
